As a fall favorite, pumpkins have been changed into so many things. One of the simplest ways is through a dessert bread. Pumpkin bread pares well with breakfast, or adding it as part of your afternoon snack.
3-1/2 cups all purpose flour
1-1/2 cup sugar
1-1/2 cup brown sugar
2 tsp baking soda
1-1/2 tsp salt
1-15oz can puréed pumpkin
2/3 cup water
1 cup oil
Preheat oven to 325 degrees F. Grease 2- 8-1/2 x 4-1/2 bread pans. Combine flour, sugar, brown sugar, baking soda, salt in a bowl and blend. In a separate bowl blend together pumpkin purée, eggs, water and oil. Add the wet mixture into the dry mixture, mixing well.
Fill both bread pans evenly using all of the batter. Bake in 325 degree F oven for 60-80 minutes or until a toothpick and comes out clean.
Cool bread before removing from baking pans.
